Today, I'm going to share with you
my grandma recipe on SOTO. Technically its chicken soup eaten with rice cube.
Since there are many things to prepare (which might confuse you later on), I
decide to split it into two sections. The chicken soup and the condiments (we
malay take the condiments seriously) 👻
Ingredients that need to be blend:
1.
lemongrass
2.
galangal
(lengkuas)
3.
ginger
4.
garlic
5.
wild
onion (bawang merah)
Chicken Soup:
1.
Boil
chicken for around one hour. Later, remove the chicken from the broth except
the bones because the it needed to be shredded as condiment.
2.
In a
different pan, stir fry the blended ingredients with ghee (clarified butter) or
oil together with clove, cinnamon, star anise and cardamom. Cook and mix it
until it smells fragrant and looks well mix.

Then
pour it into the chicken broth.
4.
Add
some chicken stock, salt and soup powder. The longer it stays on the stove the
better it taste.
The Condiments:
1.
Compressed
rice
2.
Shredded
chicken meat
3.
Fried
crispy onion Fried su'un (cellophane noodles/fansi)
4.
Blanched
bean sprout
5.
Fried
potato (begedil)
